Mimi’s Cafe testing fast-food takeout concept

Irvine-based Mimi’s Cafe is testing a takeout cafe in Arizona — a quick-service concept that could make its way to Orange County.

“If it goes well (in Arizona), our game plan is to go back to Southern California” with the concept, said chief executive Tim Pulido  said in a recent interview.

The move comes as Mimi’s scrambles to lure diners in an unforgiving economy.  The Mimi’s Quick Cafe in Chandler, Ariz., is designed to attract Starbucks crowds — on-the-go diners who need a quick coffee and breakfast sandwich before heading to work.

“We just wanted to provide an option to our guest if they are time pressed and stressed,” Pulido said of the cafe, which is open for breakfast and lunch.

The quick cafe is not an isolated storefront. Instead, it is a separate counter-service area in the chain’s recently remodeled Chandler restaurant. If the concept proves to be profitable, Pulido said other takeout cafes could be added to older restaurants that need remodeling, including many in Orange County.

What’s the measure of success?

“We want to make sure we have above a double-digit return,” he said.

The express cafe in Arizona offers many of the same menu items as the regular Mimi’s Cafe menu. For example, it features eight breakfast items, four lunch salads, seven regular sandwiches, soups and combo meals. Prices range from a $6.99 breakfast sandwich to $8.49 for a salad, Pulido said.
